Vegan Churro Bites

Deep-fry or bake them, they’ll still turn out light, airy and crispy with a fluffy inside. And not to mention, coated with everyone’s favourite – good ol’ cinnamon and sugar combo!
INGREDIENTS:-
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tbsp olive oil
- 1 cup hot water
- 3 tbsp coconut sugar / beet sugar
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
INSTRUCTIONS:-
- Mix together the flour, baking powder and sugar in a medium-sized bowl.
- Trickle in the boiling water along with the vanilla extract and oil. Stir everything together to form a thick dough.
- Shape the dough into teaspoon sized balls. (You can also use a pastry bag and pipe out the churro bits into hot oil.)
- You can either deep fry or bake the churros.
To deep-fry : Heat up oil in a deep skillet or a pot over medium heat and fry for 3-5 minutes or until they turn golden brown. Once done, place the churros on a paper towel to remove excess oil.
To bake : Preheat the oven to 400 degrees F. Place the churros on a greased baking sheet. Pop it in the oven and let it bake for 25 minutes. Remove from the oven and let it cool for about 5 minutes.
5. In a small mixing bowl, mix together sugar and powdered cinnamon. Roll each churro in the mixture and coat well.
Serve warm with your choice of sauce and topping.
